Авторами установлено, что ферментный препарат (ФП) способствует сокращению продолжительности расстойки тестовых заготовок и изменяет качество хлеба в зависимости от его расхода и способа приготовления теста. Применение ФП способствует формированию более мелкой пористости и повышению эластичности мякиша хлеба.
